Molokhia and Rice

So today I thought about trying to make my future husband's favorite dish...Molokhia!

I have tried it in various places (houses not outside) before so I have something to compare my version to. I have also tried his older sisters Molokhia which I guess will be close to 'how momma makes it' which is what everyone strives for :)

So here's how I made it...

Ingredients:

Chicken meat 1/2 kilo
Frozen Molokhia leaves chopped small bag
Maggi Cubes chicken 1 cube
Garlic 5 cloves
Lemon to taste

rice (as much as you like)
vermecelli (browned & added to the rice b4 cooking)

Boil the chicken in the stock made from the maggi cube. Once the meat is cooked take the chicken and fry in oil with the garlic cloves roughly chopped. Brown the chicken and then add the frozen molokhia. Add bit by bit the chicken stock till a soup-like consistency is acheived. Don't make it too runny though or the rice will get too wet when you serve it.  The molokhia should then be allowed to simmer for around 30 minutes. Remove any froth with a metal spoon and serve with rice and fresh lemon to squeeze over the dish.

Well the result was good, it tasted just as I expected it to. Let's see if it works the next time round :)

My trip to Jordan

We, Mr Z and I, decided that I should go to Jordan to meet the rest of his family. He travelled from his place in KSA and I travelled from Scotland picking up my future step-daughter (Miss Y) in Germany on the way. We all arrived in Amman at around the same time. His brother was there to collect us in the airport. 

Amman airport... as soon as I arrived I felt a kind of peace, even though the airport had something chaotic about it. I don't know if it was the feeling of being 'home' or knowing that your soulmate is close by?! Anyway, from the first second, I knew Jordan was home for me. Miss Y and I waited outside for Mr Z to arrive... his flight was delayed.
After about 30 minutes or so... there he was...My Love :) It had been 6 months since the last time I saw him! I had missed him so much.
We drove then to his sisters house where I would be staying for the next 10 days. It was great! Waking up at Fajr with the Adhan from outside :) this has to be the best feeling in the world! I wonder if the people who are born with this in their daily life feel it's power? It was also wonderful to be imersed in the arabic language. If I live there for any length of time it will be the best way to learn the language. I only know some arabic now and I'm still too shy to speak it.

Alhamdulillah for everything! I won't bore you with too many the details of the trip. But the important thing is that we got engaged and inshallah we will marry in Scotland in the spring.
During my time in Amman, I realised that Mr Z and I will make a happy life together inshallah, even though neither of us are perfect... just we are perfect for each other. It was great to see him with his family as this is how you can tell if somone is being real with you or not.

Being back home is hard! I just have to concentrate on getting myself ready for family life, stay busy and pray lots to get me through the next few months till I see My Love again.

How true this saying is!

I'm sure we can all think of a time when we have done both unfortunately. The people who trust us and treat us well deserve the best from us but they don't always get it. On the other hand, the people who treat us badly quite often we chase them for attention or approval.

Try to appreciate the good people around you and show them you care :)

A bit of background....

So just to bring you up to speed to where I am in my life... I converted to Islam almost 5 years ago (that's a story for another time) after starting university and meeting some muslims. I began university later than most people, I guess because my family couldn't afford to send me to uni when I left school. But after working for a while in a decent job I realised that the only way to go 'up the ladder' was to have a degree. I had always wanted to go to uni so after my 6yr relationship broke up I thought the change would be just what I needed. Finally I was going somewhere....little did I know I was going much further than I ever imagined!
Now, I have my degree. I feel so blessed to have found Islam. I am working in a great job and I have found a good man who I want to marry. The only trouble is he is in Saudi Arabia! (Don't worry he is not Saudi - before anyone warns me that they can't marry foreigners).
He is roughly 3,000 miles away from me! This blog is to track the journey I will have to make to be with him and inshallah start a new life and family.
